Makes: about 20 bars
4 c. quick cooking oats
1/3 c. canola oil
1/3 c. agave nectar
1/4 c. organic maple syrup
2 tsp. almond extract
1/8 c. chopped crystallized ginger
1/2 c. chopped dried cranberries (or)
goji berries soaked in apple juice, then drained
3 Tbsp. sesame seeds
1/2 c. chopped almonds
1/2 c. chopped walnuts
(optional) 3 Tbsp. flaxseeds
Preheat oven to 400°F. Place oats on a baking sheet. Bake 10 to 12 minutes, until lightly toasted. Turn oven to 350°F. Mix remaining ingredients in a large mixing bowl. Stir in oats. If mixture seems too dry, add a little more oil. Spray a 9X13 pan with cooking spray and press oat mixture evenly in the pan. Press in flaxseeds on top of the bars if desired. Bake 25 minutes, until golden. When cool, cut into bars and store in an airtight container for up to 2 weeks.
