Prep time: 15 minutes, Serves 4-6
1/2 cup hardwood chips (alder or fruit wood), soaked for 1 hour in water
6 (6 oz) fillets wild salmon
organic extra virgin olive oil
salt and pepper to taste
Prepare a medium-hot fire in the grill. Brush salmon with oil and sprinkle with salt and
pepper.Drain wood chips and sprinkle over coals. Grill 3 minutes per side. That’s it!
