Prep time: 75 minutes, serves 6-8
Streusel Topping:
1 cup brown sugar
1/2 cup pecans, chopped
3 Tbsp. organic butter,
softened
1 Tbsp. flour
1 1/2 tsp. cinnamon, ground
1. Mix brown sugar, chopped pecans, cinnamon and flour. Stir in softened butter. Set aside.
Apple mixture:
1 pound apples, peeled and
sliced thin
2 Tbsp. organic butter
3 Tbsp. sugar
2. Cook apples in a saucepan with butter and sugar for five minutes.
Cake:
1/2 cup organic butter
2 cups flour
1 cup sugar
2 tsp. vanilla extract
2 organic eggs
1/4 tsp. nutmeg
1 Tbsp. baking powder
1 cup buttermilk
3. Preheat oven to 350 degrees F. Grease a 9” x 9” x 2” baking pan with butter and dust with flour.
4. Cream butter and sugar. Add vanilla. Add eggs and buttermilk.
5. Add flour, baking powder,
nutmeg, and apple mixture and stir just until blended.
6. Pour into greased pan, top with streusel, and bake for 1 hour and
5 minutes or until a toothpick inserted in the center of the cake comes out clean.
