Prep Time: 40 minutes, Serves 6
1/2 cup sugar
3 Tbps. organic, unbleached all-purpose flour
6 organic apples, peeled, cored and cut into 1 inch chunks
1 stick butter cut into quarters
1 cup organic, unbleached all-purpose flour
1/2 cup organic oatmeal
2/3 cup brown sugar, packed
1/4 tsp. sea salt
1 Tbps. ground cinnamon
2 tsp. vanilla
1 tsp. ground nutmeg
1 cup pecans, optional
Pre-heat an oven to 350 degrees F. In a large mixing bowl, combine the sugar and 3 tablespoons flour. Toss apples until lightly coated. Butter a 13 x 9 x 2 inch pan and arrange the apples so they evenly cover the bottom of the pan. Combine butter, 1 cup flour, oatmeal, brown sugar, salt, cinnamon, vanilla and nutmeg in a food processor. Pulse until the mixture is crumbly. Sprinkle over the apples, top with the pecans (optional) and bake for about 15 to 20 minutes or until topping is crisp and golden. Serve warm with a scoop of vanilla bean ice cream.
