Avocado and Mango Salsa

Prep time: 5 minutes, Makes: 4 cups

2 ripe avocados, diced
1 c. mango, diced
1/4 c. jicama, peeled and diced
1 jalapeno pepper, seeded and finely chopped
1/4 c. cilantro leaves, chopped
2 Tbsp. lime juice
salt and pepper to taste

Combine all ingredients in serving bowl Salt and pepper to taste. Refrigerate for 30 minutes to allow flavors to meld. Serve with Henry’s tortilla chips.
