Baked Granola Stuffed Apples

Slow baked to tender apple perfection. Drizzle with honey-vanilla yogurt and make these caramelized apples your favorite mid-week treat.
Prep Time: 1 hour and 15 minutes, Serves 6

1 1/2 cups granola
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 cup maple syrup
6 tart or tangy organic apples (try Granny Smith or Jonagold)
3 Tbps. organic butter
1 cup apple cider
1 (8 oz) cup of vanilla yogurt
1 Tbps. honey

Preheat oven to 350 degrees F. In a small mixing bowl, add the granola, cinnamon, cloves and syrup. Mix well. Scoop out the core from top of the apples - creating a well. Stuff each apple with a 1/4 cup of the granola mixture and dot with 1/2 tablespoon of butter. Place in a shallow baking dish and pour apple cider around the apples. Bake the apples for about one hour, basting occasionally or until they are tender and caramelized. Mix together the yogurt and the honey and drizzle over baked apples.
