Braised Mustard Greens with Bacon and Water Chestnuts

Serves: 4

2 lbs. mustard greens, rinsed, stemmed and chopped
3 slices Henry's Market Natural Bacon
3 cloves minced garlic
1/2 c. sliced water chestnuts, drained and rinsed
2 Tbs. apple cider vinegar
2 tsp. raw cane sugar
Salt and freshly cracked pepper to taste
1 c. vegetable or chicken broth

Heat a large sauté pan over medium heat. Cook bacon until crisp. Remove from pan and add garlic and water chestnuts. Cook 2 minutes. Add greens, in one or two batches, until they wilt enough to all the greens. Sprinkle greens with vinegar and sugar. Add broth, cover and cook 15 minutes on low heat. Chop bacon and stir into greens. Serve immediately.
