2 tbsp. red chiles, ground
2 tsp. garlic powder
2 tsp. cumin
2 tsp. brown sugar
1 tsp. black pepper
1 tsp. Mexican oregano
1 tsp. sea salt, coarse
1/4 c. Henry's Extra Virgin Olive Oil
zest of one lime
juice of one lime
Mix together spices, sugar and salt. Stir in olive oil, lime zest and lime juice to make a paste. Rub all over flank steak. Cover and refrigerate for at least 30 minutes, up to 2 hours. Sear steak to medium rare, allow to rest 5 minutes and thinly slice against the grain. Serve with warm corn tortillas, salsa, sour cream, shredded cheese, sliced avocados and a squeeze of lime.
