Cookies:
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 cup sugar
1 cup Henry's butter, softened
1 egg
1 cup unspiced pumpkin
1 tsp. vanilla extract
1/2 cup walnuts, chopped (optional)
Icing:
3 Tbsp. butter
4 Tbsp. milk
1/2 cup brown sugar or sucanat
1 cup powdered sugar
1 tsp. vanilla extract
Preheat oven to 350 degrees F. Mix together flour, baking powder, baking soda, and cinnamon in a small bowl. Set dry ingredients aside. In a large mixing bowl, cream together sugar, butter, egg, pumpkin and vanilla. Add dry ingredients. Stir in the nuts.
Drop by teaspoonfuls onto ungreased baking sheets. Bake for 10-12 minutes.
To make icing, combine butter, milk and brown sugar in a small saucepan. Bring to a boil and boil for two minutes, stirring continuously. Cool, then add powdered sugar and vanilla. Spread icing on cooled cookies.
