Chai Tea

There are literally thousands of spice combinations that can be used to create a delicious Chai tea. At its most basic essence, Chai is black tea brewed with spices and milk. Use this recipe as a starting place for creating your own heavenly cup of chai. A good cup of chai will be a deep chocolate color.
12 cloves
6 green cardamom pods
1 Tbsp. star anise
1 cinnamon stick
1/4" slice dried ginger root
1/4 tsp. black peppercorns
2 bay leaves
2 Tbsp. Darjeeling tea

Bring all spices (excluding Darjeeling tea) to a boil in 4 1/2 cups of water. Allow to steep for 10 minutes. Add Darjeeling tea and simmer 5 minutes longer. Strain spices out of tea. At this point, the tea base can be stored in the refrigerator for up to a week. Otherwise, add tea base to steamed milk and honey for a delicous warm drink. Can also be served iced.

You could also use allspice, coriander seed, nutmeg, fennel or vanilla bean in place of any of the spices listed above.
