4 sun-dried tomatoes, drained and chopped
1 clove minced garlic
4 fresh basil leaves, thinly sliced
3 oz. Henry's Market Chèvre, softened
2 oz. Neufchatel cheese, softened
2 Tbs. lemon juice
12 artichoke hearts
Pre heat broiler to medium-high. Mix together tomatoes, garlic, basil, chèvre, and cream cheese. Rub artichoke hearts with lemon juice. Spoon a dollop of cream cheese mixture into each artichoke heart. Place on a baking sheet. Broil for 2 to 3 minutes, until tops are golden and bubbly. Serve warm.
