4 to 6 (4oz) Boneless, skinless chicken breasts
1 can (14 oz) chicken broth
1 Tbsp. Henry's olive oil
3/4 cup chopped dates
1/3 cup apricot fruit spread
1 tsp. cinnamon
1 1/2 tsp. cornstarch
Put olive oil in a large skillet over medium heat. Cook the chicken for 7 to 10 minutes, browning on both sides. Add chicken broth and cover, cook for 10 minutes. Stir in the chopped dates, apricot fruit spread, cinnamon and cornstarch. Cook for 5 minutes more, allowing the sauce to thicken. To plate, spoon pan sauce over chicken breast.
