Chile Rubbed Pork Tacos Served Family Style

This easy-to-prepare dish allows you to enjoy your company without having to spend a lot of time in the kitchen.
Prep Time:10 minutes, Cook Time: 25 minutes, Serves 4

3 Tbsp canola oil
3 Tbsp cider vinegar
3 Tbsp cilantro, minced
Juice and zest of 1 lime
1/2 onion, diced
1 Tbsp olive oil
1 1/2 lbs natural pork tenderloin, cut into bite-sized cubes
1 tsp chile powder
1 tsp garlic powder
2 Tbsp brown sugar
1/2 tsp oregano
1/2 tsp cumin
1/4 tsp allspice
1/4 tsp cinnamon
8 warm corn tortillas
Salsa
Monterey Jack Cheese, shredded
shredded lettuce and lime wedges
2 avocadoes, mashed with lime juice and fresh garlic

Mix first 5 ingredients in a bowl. Stir in pork. Cover and refrigerate for 10 minutes. Mix together the chile, garlic, sugar, oregano, cumin, allspice and cinnamon; set aside.

Heat olive oil in a large skillet. Drain pork; toss in spice mixture until well coated. Add pork to skillet and sauté until browned and cooked through. Transfer pork to serving bowl and serve with tortillas, salsa, cheese, lettuce, lime and avocados.
