Cilantro Pesto

Cilantro adds a southwestern twist to an Italian favorite. Slather this pesto on pizzas or toss with Henry's pasta for a fast, and fabulous, meal.
Prep time: 5 minutes

3 bunches cilantro
juice of 1 lime
1 jalapeno, seeded
2 cloves garlic, chopped
1/2 cup pine nuts
1/4 cup Parmigiano Regiiano cheese
1/2 cup Henry's Extra Virgin Olive Oil
salt to taste

Combine cilantro, lime juice, jalapeno, garlic, pine nuts, garlic and cheese in blender or food processor and puree. Drizzle in oil and blent into a paste. Refrigerate until needed.
