Makes: 2 cups
1 c. light brown sugar
1/3 c. kosher or coarse salt
1/4 c. ground cacao nibs
3 Tbsp. garlic powder
3 Tbsp. smoked paprika
3 Tbsp. ground espresso beans
2 Tbsp. chile powder
2 Tbsp. coarse black pepper
1 Tbsp. coarse pink peppercorns
Place all ingredients in a food processor. Pulse until well mixed. Store in airtight container in a cool, dark place for up to 3 months. Delicious rubbed over beef tenderloin, pork chops, tofu or chicken breasts.
