Cooling Yogurt, Cucumber and Mint Salad

Prep Time: 5 minutes, Cook Time: 25 minutes, Serves 6

3 seedless organic English cucumbers, diced
1 1/2 tsp. sea salt
1 Tbsp. fresh mint, minced
1 garlic clove, minced
1 c. organic, plain yogurt
2 Tbsp. organic whipping cream
freshly cracked black pepper

Place cucumbers in colander. Sprinkle with salt and set stand 15 minutes. Drain and rinse cucumbers and place on paper towels to drain. Combine mint, garlic, and oregano in large bowl. Stir in yogurt and cream. Add cucumbers. Mix to coat evenly. Season with pepper. Refrigerate until chilled. (Can be prepared 5 hours ahead.)
