Grilled Cheese Panini Sandwich
Cuban Pork Sandwiches

Cubanos gained popularity in the 1930s when Cuban sugar mill workers enjoyed these warm satisfying sandwiches on their lunch breaks. Cubanos are traditionally made with a special Cuban bread prepared with a unique starter and enhanced with lard which results in a crisp crust and a light interior (Cuban bread is often hard to find in the States). The bread is layered with roast pork (the pork is usually marinated in a citrus and garlic mojo sauce), ham, Swiss cheese, pickles, yellow mustard and butter. The sandwich is toasted in a press called a plancha (similar to a panini press) where the cheese melts, the bread crisps and the sandwich compresses into a warm, melty treat.
4 hoagie-style rolls or 8 slices Italian bread
2 Tbs. Henry's Market Organic Yellow Mustard
2 Tbs. light mayonnaise
2 tsp. lemon juice
1 tsp. minced garlic
1 tsp. thyme
4 thin slices pork roast
4 slices deli ham
4 slices Swiss, Jarlsberg or Henry's Market Provolone Cheese
4 Henry's Market Organic Dill Pickles, thinly sliced
1 Tbs. Henry's Market Organic Butter, softened

Slice rolls in half. Mix mustard, mayonnaise, lemon juice, garlic and thyme together. Spread mayo-mustard mixture over both sides of each roll or bread. Layer pork, ham, cheese and pickles on the roll.

Heat panini maker or sandwich press. Lightly butter the top of each sandwich. Place the hoagies in the sandwich press and a toast until the cheese melts, about 8 to 10 minutes.

If you don’t have a Panini maker, heat a griddle pan or sauté pan over medium heat. Wrap two bricks in foil. Lightly butter the top of each sandwich and place two sandwiches in the pan. Place a cast iron frying pan on top of the sandwiches and place a brick in the frying pan. Cook 5 minutes. Flip the sandwiches, replace the pan and the brick and toast 3 to 4 minutes longer (adding more butter to the pan if necessary). Slice in half and serve warm.
