Dijon Parmesan Crusted Halibut

Tangy Dijon and horseradish complement the mild flavors of fresh halibut. Enjoy with a simple salad drizzled with a touch of oil and vinegar.
Prep Time: 15 minutes, Cook Time: 15 minutes, Serves 4

1/4 cup canola mayonnaise
1 Tbsp. Dijon mustard
1 Tbsp. horseradish
1 Tbsp. fresh lemon juice
1/2 cup dry bread crumbs
2 Tbsp. parmesan cheese, grated
4 halibut fillets, about 4 oz. each
1 Tbsp. butter, melted

Preheat oven to 350°F. Lightly grease a baking sheet or spray with vegetable oil.

Combine mayonnaise, mustard, horseradish and lemon juice in a small bowl. Stir in half (1/4 cup) of the dry bread crumbs and 1 tablespoon of the parmesan cheese. Arrange halibut fillets on the baking sheet. Spread bread crumb mixture evenly over each fillet.

In another small bowl, mix together melted butter and the remainder of the bread crumbs and parmesan cheese. Sprinkle over the coated fillets. Bake for 15-18 minutes, or until each fillet flakes easily with a fork.
