Dilly-icious Egg Salad

TIP: Buy eggs a week before you plan to use them. “Older” eggs (not older than the use by date) are easier to peel when boiled.

Prep Time: 10 minutes, Makes about 3 cups

1 dozen Henry's Large Organic Eggs, hard boiled
1/3 c. organic mayonnaise
2 tbsp. whole grain mustard
1 tbsp. Henry's Dijon Mustard
3 tbsp. fresh dill, minced
1 tbsp. fresh tarragon, minced
2 tbsp. capers, chopped
1/4 tsp. paprika
1 tsp. yellow or brown mustard seeds
sea salt and cracked black pepper to taste
your favorite Henry's Sliced Bread
organic green, red or butter leaf lettuce

Peel eggs and chop into small pieces using a pastry blender. Stir in remaining ingredients and season with salt and pepper. Place lettuce on one slice of bread. Spread egg salad over lettuce. Top with second slice of bread. Try toasting the bread for a crisp and tasty treat. Enjoy!
