Easy Grilled Chicken Breasts

This simple, yet delicious recipe infuses lemon and olive oil to accent the naturally good flavor of fresh boneless skinless chicken breast. Serve with grilled squash, twice baked potatoes, or a tossed salad. Perfect paired with a light to medium bodied white wine.
Prep time: 1 hour, Grilled Time: 15 minutes, Serves 4

4 boneless skinless chicken breasts
1/4 cup olive oil
Juice of 1 lemon
1 tsp. salt
1 tsp. pepper

Rinse Chicken thoroughly with cool water. Mix olive oil, lemon, salt and pepper thoroughly in large bowl. Immense chicken in marinade and then remove one chicken breast at a time and put each in separate zip lock bag. Marinate for 1 hour.

Heat grill or grill pan until it reaches medium heat. Remove chicken from zip lock bags and cook each side for 6-8 minutes or until golden brown. Serve immediately alongside grilled asparagus or a side salad.
