Prep time: 1 hour, Grilled Time: 15 minutes, Serves 4
4 boneless skinless chicken breasts
1/4 cup olive oil
Juice of 1 lemon
1 tsp. salt
1 tsp. pepper
Rinse Chicken thoroughly with cool water. Mix olive oil, lemon, salt and pepper thoroughly in large bowl. Immense chicken in marinade and then remove one chicken breast at a time and put each in separate zip lock bag. Marinate for 1 hour.
Heat grill or grill pan until it reaches medium heat. Remove chicken from zip lock bags and cook each side for 6-8 minutes or until golden brown. Serve immediately alongside grilled asparagus or a side salad.
