Edamame Hummus

Create a Tri-Colore of Cool Dips for your party by serving White Bean and Rosemary Dip, Roasted Red Pepper, Feta and Yogurt Dip and Edamame Hummus with baby carrots, celery sticks, tri-color pepper strips, cucumber slices and toasted pita sticks.

Makes: 2 cups

2 c. edamame
1/4 c. tahini
1/4 c. warm water
1 clove garlic
1/2 tsp. cumin
1/2 tsp. salt
2 Tbsp. Henry's Extra Virgin Olive Oil
2 Tbsp. fresh lemon juice
2 Tbsp. fresh parsley, chopped
zest of one lemon
olive oil for garnish
chili powder for garnish

Cook edamame according to package instructions. Drain and place in food processor. Add the next 9 ingredients. Pulse until smooth. Garnish with a drizzle of olive oil and a sprinkle of chili powder.
