End of the Rainbow Irish Apple Cake

We'd like to think at the end of every rainbow waits not just a pot of gold and a tricky little leprechaun-but also a slice of Irish apple cake topped with vanilla ice cream (or soy for some of ye'.) And as the Irish proverb says, "When the apple is ripe, it will fall." (We're not sure how that relates either, but we sure do like it.)
Prep time: 10 minutes, Cook time: 40 minutes, Serves 4-6

4 Tbsp. butter
1 cup granulated sugar
1 egg, beaten
4 Granny Smith apples, cored, peeled, and diced
1/4 cup chopped walnuts
3 Tbsp. raisins
1 tsp. vanilla extract
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 cup all-purpose flour

Preheat the oven to 350 degrees and grease an 8-inch square cake pan. In a large bowl, cream the butter and sugar together until fluffy. Add the egg, apples, nuts, raisins (optional) and vanilla and stir well. Mix in the dry ingredient and then pour the batter into the prepared pan and bake until the cake is lightly brown, about 40 minutes. Let cool for a few minutes and then remove from pan and serve warm. Excellent alongside slices of Dublin Irish cheese, ice cream, soy ice cream, or all natural whipped cream.
