Prep Time: 15 minutes; Cooking Time: 8 minutes; Serves 4
3/4 cup olive oil
2 large cloves garlic, slivered
1 pound or more shrimp
2 large cloves garlic, minced
2 Tbsp. fresh lemon juice
1/4 cup fresh parsley, minced
1 tsp. salt or to taste
Freshly ground pepper to taste
1 Tbsp. dry sherry (optional)
1. In a large skillet, warm the olive oil over medium-low heat. Add the slivered garlic and cook gently until golden brown, stirring occasionally.
2. Add the shrimp and sprinkle with the minced garlic. Simmer for 1 to 2 minutes, then turn shrimp gently.
3. Add the lemon juice, parsley, salt, pepper and sherry. Increase the heat slightly and cook until shrimp are pink, about 2 minutes, stirring occasionally.
4. Serve immediately. Delicious tossed with your favorite pasta or served with fresh French bread.
