3 lb. extra large (16-20 per lb.) shrimp, peeled and deveined with tails on
3 Tbsp. sea salt
Juice and zest of 1 lemon
1 Tbsp. dill
1 Tbsp. black peppercorns
1 Tbsp. coriander seeds
1 tsp. red pepper flakes
2 bay leaves
1 (10 oz.) jar Henry's Market Organic Cocktail Sauce
1 lemon, cut into wedges for garnish
Fill a large saucepan with 10 cups of water and bring to a boil. Stir in salt, lemon zest and juice, and spices. Add shrimp, cover and turn off heat. Allow shrimp to stand for 6-8 minutes. Place 3 cups of ice in a large bowl and fill with water. Drain shrimp and place in ice bath. Drain and serve with cocktail sauce and lemon wedges.
