Game Day Bruschetta

Makes 2 cups

1 Baguette
1/4 c. Henry's Organic Extra Virgin Olive Oil
4 cloves garlic
4 vine-ripened tomatoes
8 basil leaves, finely sliced
2 Tbsp. Henry's 6-Star Balsamic Vinegar
1/4 tsp. red pepper flakes
salt and pepper to taste

Preheat oven to 400°F. Slice baguette into rounds and brush with olive oil. Bake 10 minutes, until lightly toasted. Rub each slice with fresh garlic; set aside. Slice tomatoes horizontally and squeeze out seeds. Dice and place in a bowl. Stir in 2 cloves minced garlic, 1 tablespoon olive oil and remaining ingredients. Top bread with tomato mixture and serve.
