Glazed Carrot Snack

Who knew a carrot snack could be so enticing? Serve as an after school snack or add to summer salads. Delicious!
Prep Time: 25 Minutes, Serves 4

4 medium carrots, washed and peeled
2 tsp. butter
1 1/2 Tbsp. brown sugar, packed
1/4 cup Henry's orange juice

Cut the carrots into 1/4-inch thick rounds. Place the carrots in a bowl and add 1/8 cup of water. Cover the bowl with plastic wrap and microwave for 2-5 minutes until tender but not mushy. (If you do not have a microwave, you can boil the carrots in water for 3-5 minutes until the desired cooking has been achieved.) While the carrots are cooking, measure the butter, brown sugar and orange juice in a small pan. Heat until the mixture becomes syrupy and then add the drained carrots to the pan. Continue cooking over a lower heat until the carrots are nicely coated. Remove the pan from the stove and serve - remember, they may be hot!
