The wheat-free / gluten-free diet is the fastest-growing nutritional trend in America. Some people give up wheat and gluten out of medical necessity; others sort of "stumble" onto the diet because they realize bread, beer and other gluten-laden goodies make them feel bloated, or cause some type of distress.
