Gluten-Free Apple Spice Muffins

Add a sweet and spicy treat to your child’s lunch box or after-school snack roster. Replacing white flour with brown rice flour creates a gluten-free muffin that everyone will love.
Prep Time: 15 minutes, Bake Time: 20 minutes, Serves: 12

2 c. organic brown rice flour
1 tsp. aluminum-free baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
2 Henry's Large Eggs
1/3 c. sucanant or maple syrup
2 Tbsp. Henry's Canola Oil
1/2 c. rice milk
1/2 c. Henry's Apple Sauce
1 tsp. vanilla extract
1 organic apple, peeled, cored and grated
2 Tbsp. sucanant
2 tsp. cinnamon


Preheat oven to 350° F. Place 12 unbleached muffin cups into a muffin pan. Sift dry ingredients in a bowl. Stir together the eggs, sugar or maple syrup, oil, apple sauce and vanilla together in another bowl. Fold into the dry ingredients. Stir in apples. Fill muffin cups 2/3 full. Mix sugar and cinnamon together and sprinkle over muffins. Bake for 20 minutes or until golden brown.
