Gluten Free Chicken Nuggets

Parents of kids on a gluten-free diet usually complain loudly, “We miss our chicken nuggets!” No need to miss them! The key to any gluten-free cooking is creativity. I make two varieties of chicken nuggets, both embarrassingly simple, and both passing taste tests of any discriminating nugget-eater.

Chicken strips (look for pre-sliced boneless, skinless chicken breasts to cut down on prep time)
3 eggs, beaten
Cooking oil

For the coating, you can get as creative as you want. I suggest one of the following (or mix them):
Crushed potato chips (with any flavoring – barbecued is a family favorite)
Gluten-free pancake mix (Henry’s carries one by Arrowhead Mills called “Wild Rice Pancake Mix”)
Seasoned salt (season the pancake mix to taste)

Preparation:
Dip the chicken strips in the egg
Roll in coating mixture
Fry in cooking oil, or bake in a greased glass pan at 350 until cooked thoroughly. If you want to be really decadent, deep fry.

Dipping sauces
Just like the fast food restaurants, you can offer dipping sauces. Use honey, mustard, honey-mustard, barbecue sauce, or other family favorites. Just remember to check the label (and even call the manufacturer) to make sure you’re not getting hidden gluten in ingredients such as soy sauce, hydrolyzed vegetable protein, or modified food starch.
