Vinaigrette
5 tbsp Henry's Organic Extra Virgin Olive Oil
3 Tbsp Balsamic Vinegar
1 tsp oregano
1 tsp mint
1 garlic clove, minced
1 tsp Henry's Dijon Mustard
Whisk dressing ingredients together. Set aside.
6 cups Romaine lettuce, chopped
1 can Henry's Garbanzo Beans, drained and rinsed
15 Kalamata Olives, chopped
5 or 6 artichoke hearts, chopped
2 cucumbers, peeled and sliced
2 roasted peppers, chopped
1/2 cup red onion, thinly sliced
1/2 cup feta cheese, crumbled or cut into chunks
Toss all the ingredients together. Drizzle with vinaigrette. Chill for an hour before serving.
