Grilled Cinnamon Pears with Vanilla Bean Mascarpone

Ripe fruit, with it's natural sweetness, is ideal for grilling. Try this juicy pear recipe - perfect for a fire-roasted finale.
Prep time 15 minutes, Serves 4

6 ripe, but firm pears, cored and halved
4 Tbsp butter
2 tsp cinnamon
3 Tbsp brown sugar
2 tsp vanilla extract

Prepare a medium-hot fire in the grill. Slice vanilla bean lengthwise, scrape out seeds; stir into mascarpone cheese. Mix in 1 tsp vanilla extract and honey. Chill until needed. Melt butter in a saucepan. Stir in cinnamon, sugar and 1 tsp vanilla extract. Brush over pears. Place pears face side down on grill 4 minutes per side. Remove and spoon a dollop of mascarpone into each pear. Garnish with raspberries or cherry sauce.

Brandied Cherry Sauce

Prep time 10 minutes, Serves 4

1 cup Black Cherry Juice
1 Tbsp cornstarch or arrowroot
4 Tbsp brandy
4 Tbsp sugar
2 Tbsp butter
1 tsp almond extract
2 1/2 cups bing cherries, pitted and halved

Mix cherry juice and cornstarch together in a saucepan. Cook over medium heat until thickened. Stir in brandy, sugar, butter and almond extract. Add cherries. Stir frequently and cook until ingredients are heated through. Serve warm.
