Makes 2 cups
4 fresh pineapple rings, 1 inch thick
1 red onion ring, 1 inch thick
2 cloves garlic, minced (about 2 tsp.)
2 Tbs. lime juice
1/4 cup chopped cilantro
2 tsp. chipotle purée
1. Heat grill or grill pan to medium
heat. Spray pineapple and onion with
cooking spray. Grill 2 to 3 minutes per
side, or until tender and caramelized.
(Onion may require 2 to 3 additional
minutes.) Cool.
2. Chop pineapple and onion into bitesize
pieces. Combine with garlic, lime
juice, cilantro and chipotle purée in
medium bowl. Season with salt. Chill
until ready to serve.
