HBLT Sandwich (Hard Boiled Egg, Bacon, Lettuce and Tomato)

Prep Time: 10 minutes, Makes 4 sandwiches

1/3 c. mayonnaise (regular or soy-based)
2 tbsp. fresh dill, minced
2 tbsp. fresh basil, minced
2 tbsp. fresh tarragon, minced
1 clove garlic, minced
8 slices Sun Harvest Whole Grain Bread, toasted
sea salt and cracked black pepper to taste
4 Sun Harvest Large Eggs, hard boiled, peeled and sliced
8 slices bacon, cooked (pork, turkey or veggie)
8 thin slices tomato
4 leaves green leaf lettuce

Mix mayonnaise with dill, basil, tarragon and garlic. Lightly spread herb mayo on each slice of bread. Arrange one egg on each slice of bread. Sprinkle with salt and pepper. Top with bacon, tomato and lettuce. Top with remaining bread. Slice diagonally and enjoy!
