Hanukkah, also called The Festival of Lights, is an eight-day holiday that celebrates two important events. The first event is the reclamation of the sacred temple from the Syrians, which marked a victory at the end of a long battle for religious freedom. The second miracle occurred when the Menorah was lit in the reclaimed temple. According to tradition there was only enough sacred oil to burn for one day, however the oil miraculously lasted for eight days. Today, Hanukkah is a time to celebrate family, friends and pride in one’s history and heritage. In addition, the highlights of this joyous occasion are the lighting of the Menorah, the exchange of small gifts and delicious meal for family and close friends. Oil plays a large part in the preparation of the meal as it symbolizes the miracle of the sacred oil in the temple.
Wine Pairing Suggestions
Light, effervescent wines pair nicely with this meal of rich layers of spices, herbs and fragrant olive oil. Try a fruity Johannesburg Riesling, or if you prefer a dry wine enjoy a glass of Viognier. Champagne or sparkling wines from California, or even Prosecco from Italy offer enough fruit to enhance the Brisket with Figs, Apples and Apricots, as well as enough acidity to cut through the fried foods.
