4 pounds beef tenderloin roast
2 cloves garlic, crushed
1/2 tsp. dried Italian oregano
1/4 tsp. dried basil
1/4 tsp. fresh rosemary
1/4 tsp. dried thyme
1/4 tsp. dried parsley
1/2 tsp. ground black pepper
Heat oven to 425 degrees F. Combine garlic, oregano, basil, rosemary, thyme, parsley and pepper and rub into roast evenly. Place tenderloin roast on a rack in a shallow roasting pan. Roast, uncovered, for 45 to 50 minutes for medium-rare to medium. If using meat thermometer it should read 140 degrees for medium rare, 155 degrees for medium. After removing from oven let stand for 20 minutes. Slice and serve with rice, potatoes or your favorite vegetables.
