Prep and cook time: 1 hour 15 minutes, Serves 4-6

1 1/2 cups unbleached flour
1/2 cup whole-wheat flour
1/2 cup turbinado or raw sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
1 Tbsp. cinnamon
1/2 cup toasted walnuts, chopped (optional)
3 to 4 mashed, ripe bananas, about 1-1/2 cups
1/4 cup plain or vanilla yogurt
2 large eggs
1/3 cup canola or safflower oil
2 tsp. vanilla

Heat oven to 350 degrees F. Grease and flour the bottom and sides of a 9x5x3 inch loaf pan. Combine dry ingredients in a large bowl – set aside. Mix wet ingredients together in a large bowl. Lightly fold banana mixture into the dry ingredients with a rubber spatula until just combined. Pour batter into loaf pan, put in oven and bake for about 50 to 55 minutes, or until a wooden skewer inserted near the center comes out clean. Cool in pan for about 10 minutes. Release from pan, slice and enjoy warm with a cold glass of milk.
