How to Pick the Best Corn
When choosing a couple ears of corn, look for fresh-looking green husks. The corn should feel heavy in your hand and the silk at the top should be slightly moist, but not moldy. To check freshness, pull back a little bit of the husk. The kernels should look firm, and smell fresh. When pierced the kernels should release juice that is slightly cloudy, indicating a fresh crop of corn. Corn is best stored left in its husk in the refrigerator. If the corn is husked, place in a plastic bag and store in the refrigerator. Corn stored at room temperature loses its sweetness and freshness very quickly. If you pick your own corn, pick it in the morning for peak sweetness.

TIP: For the freshest flavor, enjoy sweet corn as soon as possible after it has been picked, as the sugars start to convert to starch which toughens the kernels and makes them less sweet.
