Irish Soda Bread

Try this traditional Irish quick bread for a warm and tasty breakfast treat. Or warm some up in the afternoon and serve with a brisk pot of Earl Grey tea.
Prep Time: 15 minutes, Bake Time: 40 minutes, Serves: 6

2 c. unbleached, all-purpose organic flour
2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. sea salt
1/4 tsp. baking soda
1 c. organic red currants
1 c. organic buttermilk
1/4 c. Henry's Canola Oil
3 tbsp. Henry's Unsalted Butter, melted

Preheat oven to 375°. Sift together flour, sugar, baking powder, salt, and soda. Stir in currants. Fold in buttermilk and oil, until just mixed. Knead dough on a lightly floured surface, 6 to 8 times. Shape into a 6-inch round and place on a baking sheet. Cut a cross on the top of the loaf. Bake 40 minutes, or until golden brown. Brush with melted butter, serve warm.

If you can't find red currants, dried blueberries, cranberries or golden raisins make a great substitute. Just give your dried fruit of choice a rough chop first so there are small bits of fruit throughout the bread.
