1 medium head cauliflower, cut into florets
1/4 c. Henry's Extra Virgin Olive Oil
3 Tbsp. freshly squeezed lemon juice
2 cloves garlic, minced
3 Tbsp. capers
1/2 tsp. salt
Freshly ground pepper, to taste
1/4 c. Parmigiano-Reggiano
Preheat oven to 500°F. Place cauliflower on a baking sheet, lined with foil. Mix olive oil, lemon juice, garlic capers and salt together. Pour over cauliflower. Toss to coat evenly. Roast in oven for 15 minutes, until golden and caramelized. (turning once, halfway through cooking time. Remove from oven; place in a bowl or on a platter, sprinkle with pepper and garnish with cheese.
