Jason's Holiday Spiced Goat Cheese

A staple for any holiday meal, this delicious recipe is best served with toasted bagel chips, specialty wafers or grilled crusty bread.
prep time: 15 minutes, serves 12
2 4 oz. goat cheese mini-logs, approx. 4" x 1 1/2" cylinder
2 Tbsp. dried cranberries
2 Tbsp. dried apricots
1 Tbsp. crystallized ginger
1/4 tsp. ground ginger
3 Tbsp. Italian parsley, minced
3 Tbsp. Henry's Market Tamari Almonds, diced small
Assorted bagel chips or wafers

1. Allow the cheese to soften at room temperature. If not already in a cylindrical shape, place the cheese in the center of a sheet of plastic wrap measuring 12"x 6".
2. Fold the plastic wrap to seal, and roll the cheese into a cylinder shape, approximately 1"-1 1/2"in diameter. Place in refrigerator to firm slightly.
3. While the cylinder is firming, combine the dried fruits, crystallized ginger, parsley, ground ginger, and almonds.
4. Remove the cheese from its wrapping and completely coat the log with the fruit mixture leaving no bare spots visible. Place the coated log back into refrigerator until firm. Using a sharp knife, slice into thin medallions and serve.
