Jerk Chicken Burgers with Grilled Pineapple

TIP: For extra jerk flavor, sprinkle the chicken patties and pineapple with jerk seasoning before grilling.
Total Time: 30 minutes
Makes: 4

1/2 c. mayonnaise
2 tsp. Hot Pepper Sauce (to taste)
1/3 c. panko bread crumbs
1/4 c. Henry's Milk
1 1/4 lb. ground chicken, half dark and half white meat
1 Tbs. Jerk Seasoning
2 Tbsp. chopped cilantro
1 Tbs. minced green onion
juice of one lime
salt and pepper to taste
4 rings fresh pineapple
canola oil
4 leaves green leaf lettuce
4 Organic Whole Wheat Hamburger Buns

Mix mayonnaise with pepper sauce. Refrigerate until needed. Mix breadcrumbs with milk and allow to sit 5 minutes. Add chicken, jerk seasoning, cilantro, onion, lime juice and salt and pepper. Mix well. Form into four patties, about 1-inch thick, making a slight indention in the center for even grilling. Heat grill to medium-high. Brush chicken patties and pineapple slices with oil. Grill burgers about 5 to 7 minutes per side, until the center reaches 165°F. Grill pineapple slices until golden and caramelized, on each side. Toast buns if desired. Serve burgers on buns topped with mayonnaise, lettuce and grilled pineapple.
