Knee Slappin' Chili

Prep time: 15 minutes, Cook time: 45 minutes, Serves 6

2 Tbsp. Henry's Canola Oil
2 medium onions, diced
3 medium zucchini, diced
3 cloves garlic, minced
2 lbs. ground beef
2 (28) oz. cans diced tomatoes
3 Tbsp. Henry's Tomato Paste
2 (15 oz.) cans Henry's Red Kidney Beans
3-4 Tbsp. chili powder
1/2 Tbsp. cumin
salt to taste
Henry's Hot Sauce to taste
1/2 c. beer

Heat oil in soup pot over medium heat. Addonion, zucchini and garlic, saute for 5 minutes. Stir in ground beef, cook until browned. Add tomatoes, tomato paste, beans, spices and beer. Simmer for 45 minutes. Garnish with fresh cilantro, sour cream, cheddar cheese adn Henry's White Corn Tortilla Chips.
