Crust
1/3 c. Henry's Market Organic Butter
1/2 c. whole wheat organic flour
1/2 c. unbleached white organic flour
2 Tbsp. Rapadura sugar
Preheat oven to 350°F. Sift together flours and sugar. Cut butter into flour and sugar mixture using a pastry blender or two butter knives until mixture resembles coarse crumbles. Press mixture into an un-greased 8 X 8 square baking dish. Bake for 15 to 20 until set, but not browned. Keep oven on.
Filling
2 Henry's Market Large Organic Eggs, beaten
1/2 c. Rapadura sugar
3/4 c. unsweetened shredded coconut
1/2 c. chopped pecans
1/4 tsp. sea salt
1/8 tsp. baking powder
1/2 tsp. vanilla extract
Combine all ingredients and mix well. Spread over par-baked crust. Bake for 25 to 30 minutes. Frost immediately.
Frosting
2 tsp. grated lemon rind
2 Tbsp. lemon juice
1/4 to 1/3 c. raw honey
Combine all ingredients and mix until smooth.
