Makes about 1 1/2 cups
1/2 c. agave nectar
1/3 c. freshly squeezed lemon juice
2 tsp. lemon zest
2 Tbs. diced red onion
1 tsp. Dijon mustard
2/3 c. sunflower oil
1 Tbsp. poppy seeds
1/2 tsp. salt
1/2 tsp. black pepper
Place first five ingredients in a blender. Pulse until well mixed. With blender running, add oil in a slow stream until dressing is thickened. Add poppy seeds, salt and pepper. Pulse until smooth. Refrigerate until ready to serve.
