Lemony Cauliflower with Capers

Prep time: 30 minutes

2 heads cauliflower, cut into florets
Henry's Extra Virgin Olive Oil
4 Tbsp. capers
Juice of two lemons
Zest of two lemons
Salt and pepper to taste
Pre-heat oven to 400°F. Place cauliflower on a cookie sheet. Toss with olive oil. Roast for about 20 to 30 minutes, or until the cauliflower is caramelized. Turn once. Mix lemon juice with capers and 2 tbsp olive oil. Drizzle over cooked cauliflower and season with salt and pepper.
