Prep Time: 25 minutes Makes: 1 mojito
Mango Puree
3 mangos, peeled, pitted and chopped
4 tbsp. raw cane sugar
juice of one lime
Place ingredients in blender. Puree until smooth. Store in a glass jar with a lid for up to four days in the refrigerator.
Simple Syrup
1 c. organic cane sugar
1 c. water
Place sugar and water in a saucepan. Bring to a boil. Turn down to a simmer and cook for 5 minutes until sugar is dissolved and liquid is clear. Cool and store in a squeeze bottle in refrigerator form up to two months.
Mojito
4 sprigs fresh mint
1 oz. simple sugar
juice of one lime
2 oz. light rum
2 oz. mango puree
Henry's Italian Sparkling Mineral Water, chilled
Place mint in a rocks glass. Crush with pestle or fork. Fill glass with ice. Add simple sugar, lime juice, rum and mango puree. Stir. Top with mineral water. Stir. Enjoy!
