Total Time: 10 minutes, plus time to marinate
Makes: 2 cups
3 Tbs. Henry's Market Organic Extra Virgin Olive Oil
2 Tbs. white wine vinegar
3 cloves minced garlic
2 Tbs. chopped fresh herbs, tarragon, basil and thyme
1/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. red pepper flakes
10 or 12 steamed or canned artichoke hearts
Mix together first eight ingredients. Stir in artichokes. Cover and refrigerate for at least 2 hours before eating. Use within four weeks of preparation.
