Prep Time: 15 minutes, Serves 4
1 cup mozzarella cheese, cut into 1/2-inch cubes
1 cup diced tomatoes
1 Tbsp. oregano
1/4 cup calamata olives
1 Tbsp. olive oil
Dash balsamic vinegar
Fresh basil, coarsely chopped
Mix all ingredients except basil gently in large mixing bowl. Serve in decorative salad bowls and sprinkle with chopped basil for garnish.
