Minted Simple Syrup with Demerara and Turbinado Sugar

Demerara and Turbinado sugar are two styles of sugar derived from raw cane sugar and specifically processed to produce larger crystals. Both styles retain valuable vitamins and minerals and both are prized for their rich, smoky molasses aroma.
Total Time: 30 minutes
Makes: 2 cups

1 c. demerara or turbinado sugar
1 c. water
6 to 8 sprigs of mint

Simmer one cup demerara or turbinado sugar in one cup of water until the sugar dissolves. Stir in 6 to 8 sprigs of mint. Turn off heat, cover and allow to sit for at least 30 minutes. Strain out mint and refrigerate in a covered container for up to two months. Use in tropical drinks or drizzled over fruit salad.
