Mom's Easy Chocolate Cupcakes

My birthday falls near Mother's Day. Every year, Mom would treat me and my friends to these delicious, chocolaty cupcakes for my birthday, and I'd return the favor with a homemade gift for Mother's Day!--Betty, graphic designer
Prep time: 15 minutes, Serves 4-6

1 1/2 cups flour
1 cup sugar
1 tsp. baking soda
1/4 pound butter, softened
3 eggs
2 squares baking chocolate, melted
1/2 cup sour cream
3 Tbsp. water
1 tsp. vanilla
1/2 cup walnuts or pecans, chopped(optional)

Preheat oven to 350 degrees F. Put cupcake papers into a cupcake baking tray. In a large bowl, mix all ingredients well. Pour batter into cupcake papers and bake for 15 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

Frost if you like, or serve with ice cream for an extra special treat.
